Nestled amongst picture-perfect rice paddies, it is home to a rustic breakfast menu, a serious cup of coffee, a smorgasbord of fresh lunch options and an inviting garden bar.
Owner, Pablo Fourcard, first visited Bali in 1982 and quickly fell in love with the island, from the sights and sounds to the language. Growing up in Byron Bay, which is renowned for its relaxed, hipster and health conscious lifestyle, as well as being surrounded by a family obsessed with food, Pablo was compelled to open his own healthy eating space.
In 2012 Pablo and his long time best friend, Jordie Strybos, opened Watercress, which follows a conscious approach to healthy eating. Jordie’s experience and keen business sense was an essential ingredient in this successful dynamic – so much so that the perfect pair have since opened a second Watercress in Ubud.
Pablo renovated the space himself, creating a light, industrial and vintage cafe. Incorporating various materials from around the world, he used volcanic red brick on the walls and tropical hardwoods throughout. He incorporated low- slung Edison lights, vintage-inspired potted plants, a bookshelf filled with recipe books and board games to keep people of all ages entertained, and a wall of framed quotes and prints.
The comfort of the space makes it the perfect place to stop by regardless of the time of the day. The menu embraces international flair and the team believe it’s never a bad time to enjoy two perfectly poached eggs sitting proudly atop crunchy chat potatoes, rosemary butter mushrooms and peppery rocket.
When midday strikes, so can the lunchtime hunger. Swing by Watercress for a selection of fresh salads, lasagne, quiches and seafood. The only rule is that it is always tasty and packed full of goodness.
There’s no greater delight than enjoying a good cup of coffee with your meal. The boys at Watercress partnered with Revolver Espressor for the house blend, which is 100% Arabica from Colombia, Guatemala and Papua New Guinea.
For dessert, or an afternoon treat, select from one of the delicious sweets on offer. Watercress sources flaky, crispy croissants from Monsieur Spoon and there’s also carrot cake, Oreo cheesecake, rich and gooey lava cakes with organic vanilla ice cream and salted caramel slice.
If you’re in a hurry, you can also pick up take-home goods such as locally made chocolate, superfood jars such as acai powder and bee pollen, and home-grown honey from Bali mountain farms.
For a healthy snack any time of the day, Watercress should be your first stop. Grab a latte, order the eggs and settle in for a morning of board games and reading – just the way it should be.
