Classic cocktails and outstanding service is at the top of the menu at The Everleigh in Fitzroy.
Founder and principle bartender, Michael Madrusan, has tended bars for nearly 20 years in Australia, London and New York. He has worked in some of the best bars around the world including Little Branch and PDT.
Reflecting the values of its big sister bar Milk and Honey in New York, the Everleigh is run by a family dedicated to creating a homely, intimate atmosphere while serving up a menu of cocktails that is constantly changing.
While it may be difficult to find, it’s not impossible. To enter, you’ll be whisked inside an American diner, through a dimly lit hallway and then up a flight of stairs. Guests will feel like they’re stepping into the past, with old-world décor such as deer heads, leather booths, wooden floors and a marble bar dotted throughout.
With one of the largest cocktail books on display, there is a large repertoire of drinks for you to choose from. But you’re also invited to order the bartender’s choice, and discuss your favourite fresh fruits, flavours, spirits and preferred style of drink for them to create the perfect drop.
It’s the attention to detail that sets The Everleigh apart from the hundreds of other bars in the area, right down to the ice. It uses Navy Strength Ice Co, Australia’s first boutique hand-cut ice company. Delivering a 140kg block of ice every three days, bartenders then cut down the ice to the desired size that perfectly fits your drink. It’s this personal touch that keeps guests coming back.
Since opening the intimate space on 4th July 2011, the bar has been named Gourmet Traveller’s Bar of the Year in 2013, The Age’s Bar of the Year in 2012, and both Cocktail Bar of the Year in 2014, and Bar of the Year in 2015 by Time Out.
