AU79 Cafe is set to shake up Abbotsford’s cafe scene.
If the name AU79 is familiar, it’s because you may have seen it in Fitzroy cafe, Sir Charles, where the coffee roaster currently resides. However, things are only going to get better once AU79 has its own dedicated space in a converted mechanics workshop on Nicholson Street.
It’s not just a roaster and cafe though – the 200-seat eatery is also going to be home to a bakery and a patisserie.
The team behind this ambitious and delicious project is Maggie Li and Julia Hou. Their names might not be familiar but their cafes should be. Between them Maggie and Julia operate Addict Food & Coffee, Sir Charles, Liar Liar and Prospect Espresso.
AU79 is the periodic symbol for gold, and this is what the team strives for throughout all aspects of the cafe. Alongside Maggie and Julia, you’ll find Executive Chef, Stephen Hogan, Ryan Lynch who previously worked the kitchens at Addict and Bistro Guillaume and Edward Noble from Sir Charles and Chiara. Ex-Rustica head baker, Isaac Kane will be in charge of raising your expectations with freshly baked bread while the pastry kitchen will churn out an array of cakes, tarts and AU79 coffee infused eclairs.
When it comes to coffee, it all comes down to Head Roaster, Minekazu Hirayama who is in charge of creating the 24K house blend. The blend is made of beans from Brazil, Colombia and Guatemala and budding baristas can pick up a bag of beans in the retail section.
“We are so excited to offer Melbourne a unique experience at AU79. Our oven to table offering means that everything we offer is fresh and of exceptional quality, and we can’t wait to open our doors”, said AU79 General Manager, Robin Shepherd.
Combining a 200-seat cafe, roaster, bakery, patisserie, kitchen and retail space is no easy feat, so Julia and Maggie enlisted the help of Mim Design Creative Director, Emma Mahlook. Although there is a definite industrial feel to the space, there is plenty of warmth through the abundance of light and greenery. Earthy tones and lush planting create warmth and calm.
Once open, we’re sure AU79 Cafe will be good as gold.
