Before Joe Molinaro and Phillip Di Bella got their hands on 19-21 Leveson Street, North Melbourne, the space was nothing more than an old frozen-fish warehouse – a unique venue with mountains of untapped potential.
Joe, a successful cafe entrepreneur, quickly secured the rundown, northside gem, transforming the space into an iconic roastery, cafe and retail store for caffeine aficionados and amateurs alike.
Ten years on, the roastery formerly known as Di Bella Roasting Warehouse has undergone a total revamp. Saying goodbye to the timber-heavy, farmhouse-style interior, the team has introduced a new colour scheme and logo, installed a couple of Slayer coffee machines and redesigned the warehouse to create a space that is at once open, efficient and relaxed, whilst maintaining its industrial charm.
For Joe and Phillip, coffee is so much more than just a bag of beans. Raw coffee is sourced through their recent enterprise Green Bean Direct, which is committed to the production and supply of high quality specialty coffee, direct from the farmer. The pair take annual trips to coffee plantations around the world, selecting only the best green beans to bring back and roast on home turf. Green Bean Direct has also embarked on a wholesale division, supplying cafes and offices.
As for the coffee, the Roasting Warehouse pretty much has all bases covered, from medium and dark-roasted blends, complex single origin espresso and filter roasts. There are two signature house blends, The Little Champ and Raglan Street, which are made from a variety of washed and natural beans sourced from Indonesia, Brazil, Colombia and Ethiopia. Additionally, six Di Bella favourites are roasted in-house and make regular appearances in the daily line up, whilst single origins rotate and can be enjoyed through V60, batch brew, cold drip or French press.
The roles of head roaster and head barista are shared by Jason Blake and Matt Griffiths. Most recently, Jason has won awards at the 2016 Golden Bean Coffee Roasting Competition for his signature blend The Little Champ and for his skills in filter roasting. Matt has spent the past six years working alongside specialty roasters, including ST ALi and Proud Mary, developing his expertise in brewing, roasting and business management. The boys enjoy crafting new blends, always with quality and consistency in mind. Maximising the new space, the team hopes to further engage the community with open coffee cupping sessions, training and public events.
Beyond the coffee, Executive Chef, Jason Shiong and Head Chef, David Reynolds, have crafted a seasonal menu packed with creative dishes to satisfy all tastes. Sample everything from the Peking pork pancake, a re-imagination of traditional bacon and eggs; to rhubarb two ways, a satisfying breakfast dessert with buffalo yoghurt, coconut chia pudding and tart rhubarb compote. Delectable house-made sweets and cakes are also baked daily.
