Bludso’s BBQ is a family business at heart, with its roots in the Deep South of America. The talented man behind the meats is third-generation barbecue master, Kevin Bludso. As a young boy, he spent his holidays with his grandma in Texas learning smoking techniques that had been passed down through his family for generations.

In 2008 he decided to share his family’s legacy with the rest of the world, opening his first Bludso’s BBQ restaurant in Compton, California. Huge success there saw Kevin open a second restaurant in Hollywood, earning him a string of awards and an unofficial title as ‘the King of Barbecue’.

After dominating the American barbecue scene, Kevin decided to start cooking in Melbourne, opening San Antone by Bludso’s BBQ in late 2015. The restaurant has been a hit among Melburnians and visitors for its authentic American style and genuine Texan flavours.

Kevin has assembled some of the most skilful smokers to head the kitchen at San Antone. Together they stack the smokers with a combination of handpicked woods and natural charcoal to smoke their meats for more than 14 hours.

Hungry diners can feast on meats from the pit – think pulled pork, spare ribs, whole chickens and of course, beef brisket – with a selection of American-style sides like mac and cheese, and ranch baked beans.

If you’re after more of an all-in-one meal, San Antone offers Smoke Pit Sandwiches stuffed with smoked meats and a selection of sides and sauces.

For a filling meal try the Don’t Mess with Texas, a jam-packed combo of smoked brisket, pork rib meat, mac and cheese, Texas beef chilli, jalapeños, pickles, fried tomato and onion relish.

The loaded fries are also an excellent option for those looking for something that packs in a bit of everything. The Soul Fries, topped with mac and cheese, smoked pork rib meat and smoky barbecue sauce, combine the best of everything to create a gooey and delicious treat.

San Antone by Bludso’s BBQ is well known for its smoked meats, however its selection of delicious desserts also deserve a mention. Sweet and sticky American favourites grace the dessert menu, with serves of roasted banana cream pie, pecan pie with bourbon cream, and peach cobbler.
