For a chef that describes seasonality as ‘everything’, there’s no better place to set up shop than within a food market. Paul Wilson has done just that, opening Wilson & Market at Prahran Market.
The award-winning chef is no amateur when it comes to creating unique culinary concepts. British-born, he left a fantastic career in London to build an even better one down under, making his mark through head chef positions at a string of restaurants, including The Botanical.
Years as a consultant chef followed and Paul soon became known as the ‘Mr Fix-it’ of the restaurant industry, elevating restaurant culinary philosophies from good to great.
Wilson & Market represents his first solo venture and an opportunity to bring his simple cooking ethos to a different type of market. In this endeavour, he has been joined by Executive Chef, Dave Marshall and Wine Director, Virginia Selleck.
Dave arrives at Wilson & Market straight from a stint at The European, where he was assisting Ian Curley with the launch of Kirk’s Wine Bar and French Saloon. Likewise, Virginia’s resume includes a number of Melbourne’s leading venues, including Cumulus, Inc., Rockpool Bar & Grill, The Stokehouse, Prince Wine Store and Bellota Wine Bar.
Together, the talented trio makes a fantastic team. The final iteration of this venture will include three different elements: Mr Wilson’s Tuckshop, Wilson & Market lifestyle cafe, and Wilson & Market brasserie and bar.
Mr Wilson’s Tuckshop has already opened. The go-to window opens up onto the market square and is decorated with a custom mural of an Arabica coffee plant, created by Mahon & Band and painted by local artist, Colin Shepard.
Using only ethically farmed produce, the Tuckshop aims to reinvent the wheel when it comes to fast food. Dishes are informed by the ideals of nourishment and wellbeing, and are accompanied by St Ali coffee, mouth-watering treats by market chocolatier, Tad Lombardo and refreshing aqua fresco fruit drinks. There are biodynamic salads and vegetable dishes, as well as market-centric rotisserie and BBQ sandwiches.
The Wilson & Market lifestyle cafe will be the next stage to open, offering seasonal breakfasts and nutritious lunches – think grilled vegetables and grain salads.
The final link in the chain, the Wilson & Market brasserie and bar, will be a 200-people destination, where food and wine sit equally as top priority.
It will feature Melbourne’s first crustacean bar, a custom-built rotisserie, artisanal gin and tonic bar, wine wall and dessert trolley. Plates will range from slow-cooked heritage and ethically bred meats, to delicious vegetable dishes and wood-grilled sustainable seafood. These will be accompanied by a wine list of over 100 drops, sourced from both unique small-batch producers and established wineries.
