Owner, Paul Borghetti, moved to Sydney from Brisbane with the vision of setting up his own business, and his passion for the science behind coffee made this path the clear choice. Having always worked in the hospitality industry, from bars and cafes to fine-dining establishments, Paul chose to prepare and sell the number one thing that gets him out of bed every morning: coffee. How this humble little bean stirs passion in so many of us.
Grind Into Gear sources its coffee from Pablo & Rusty’s who focus on traceable, sustainable and ethically produced beans. Paul was looking for something unique and found the philosophy and approach at Pablo & Rusty’s was in line with his own views.
The house blend on offer is a seasonal blend of Brazilian (Moreninha Formosa) and Panama (Don Pepe) beans. It is sweet and well balanced in milk, and Paul finds it complements Grind Into Gear’s single origin offerings perfectly. Alongside the house blend, you’ll find single origin espresso, filter coffee, batch brew and cold drip. Grind Into Gear also sources varieties from El Salvador, Ethiopia, Kenya and Honduras.
As well as high quality coffee choices, Paul has harnessed his experience in fine dining restaurants and cafes to ensure there’s an on-trend menu filled with produce from artisan providers. The dishes are inspired by Spanish and Mediterranean flavours and can cater to all dietary needs.
Dark wood tables and charcoal coloured walls sit calmly beneath the caged pendant lights and large floor-to-ceiling windows. Grind Into Gear is currently open Monday to Friday 7am to 5pm, and till 3pm on weekends. Keep an eye out in late 2015, when they plan to add dinner service. This brand new cafe is sure to continue blossoming into an extremely popular destination for business types, young families and Stanmore locals.
While still in its infancy, having been open only a few short months, it has already gained a dedicated following.
