Advance Australia fare – 12-Micron celebrates the country’s best produce with a quintessentially Australian view.

The impressive 230 seat restaurant, late night dessert kitchen and bar is the newest addition to Sydney’s Barangaroo, bringing a distinctly Aussie flavour to the harbourside precinct.

What’s in the name? 12-Micron is a rare wool fibre which, much like ingredients in the kitchen, is refined and nurtured into a beautiful garment. Inspired by craftsmanship, the venue’s ethos is to use Australia’s beautiful produce and transform it into an ever-evolving collection of dishes.

Leading the mob is Executive Chef, Justin Wise. Having previously worked at The Press Club and The Point Albert Park in Melbourne, Justin is well-versed in Australian ingredients. Under his direction, the menu has a casual and relaxed approach, much like the local way of life.

The menu is divided into four parts, beginning with Earth. Start with dishes like paperback baked vegetables with fruit spice and goat’s curd and pickled mushrooms with celeriac, Mount Buffalo hazelnuts and sorrel, before moving onto options under the Ocean header – a lobster omelette or Skull Island king prawn steamed bun with wasabi, green mango and tobiko.

Next is Land, which includes combinations like lamb with spinach, native iron bark honey and damper, and 250g grain-fed porterhouse, sourced from Victoria’s finest farms. Air completes the offering and includes plates like half pigeon with Aussie master stock, red cabbage and Illawarra plum. To create a menu of this stature, Justin works closely with a range of producers and foragers to select the finest ingredients available at the time.

In bringing the dessert bar to life, Justin is joined by TV personality and pastry chef, Darren Purchese. It offers Sydneysiders the chance to experience Darren’s creations in their own backyard, with an indulgent a la carte menu, or three, five or seven-course degustation.

Spoil yourself with a coconut sago with passionfruit, ginger and mint, or opt for Darren’s signature dark chocolate mousse. It features salted caramel, tonka bean, mandarin and Zokoko chocolate – a rich flavour sensation that will knock your socks off.

Floor-to-ceiling windows and a large balcony with a view of the harbour are sure-fire attractions in the 120-seat bar area. Mouth-watering bar snacks include a mushroom taleggio toastie and Wagyu cheeseburger, best paired with a drop from sommelier’s Lyndsey Carr’s extensive wine list. With more than 400 wines and 32 available by the glass, Lyndsey will be able to select an Australian wine to suit your palate.

If wine isn’t your preferred potion, cocktails are also at the ready. In keeping with the Australian theme, concoctions champion local flavours – the Smoking Chaplin includes Plymouth Sloe Gin, Vedrenne apricot brandy, lime and rosella jam.

All of this is enjoyed in a space that continues the modern Australian theme. Classy, yet casual, the team behind SJB Architecture & Design have taken inspiration from the local elements in their fit out, with floor to ceiling windows that reference the indoor and outdoor lifestyle of Sydney. Green and bluestone cobbles and tiles pay homage to gum leaves and rough bark textures found in Australia.

From the food, wine and views, 12-Micron is a nod to Australia and all its stunning elements. With a central location and enough choice that you could visit five times and try something completely new, there’s much to explore within its four walls.
