Christian Cagnano was always destined for culinary success. His career started earlier than most, when at just 14 years old he started working as a kitchen hand at a pizzeria in his hometown of Tuscany. Little by little, the chefs he worked with showed him techniques and shared tips, eventually allowing him to join their ranks. When his first solo dish left the kitchen to greet his eager diners, Christian discovered the enormous satisfaction that comes from making others happy through food.
Christian’s commitment to authentic Italian fare has taken him through the kitchens of top pizzerias around the world. From Italy he moved to America, then Dubai and Germany before eventually coming to Sydney, where he worked with Ben Elias. The pair worked together seamlessly, eventually deciding to open their own authentic Italian restaurant.
Christian was on Skype to his mum back in Italy, describing his vision for a modern-rustic Italian eatery, when out of the blue his mum exclaimed that his restaurant would have plenty of ‘anema e core’: heart and soul.
To add to the heart and soul of Anema e Core, Christian and Ben keep their fare as authentic as possible. This means importing as many products as possible from Italy. The pair scoured Christian’s motherland for the best cheese, salami, olive oil and cheese they could get their hands on. When it comes to fresh produce though, only the finest locally sourced, seasonal ingredients will do.
Start with an array of antipasti. Fresh locally caught calamari is lightly fried, resulting in a crisp yet light outside, or enjoy a simple starter of top quality prosciutto and creamy burrata.
When you’re in search of Italian soul it’s hard to go past an authentic pizza – the menu features only traditional toppings and recipes to give diners a complete Italian experience. The soft bases are cooked to perfection in a wood-fired oven, clad in mosaic tiles imported from Italy. The bases are then topped with mozzarella, ham, mushrooms, olives and fresh basil for a traditional capricciosa, or mozzarella, Italian sausage, ham and mild salami for the meaty Tre Salumi pizza. Take a trip to Christian’s parents’ hometown of Naples with the Pizza 081, their local area code, topped with mozzarella, ham, mild salami, ricotta, cracked black pepper and more fresh basil.
If you can save room for dessert there are plenty of authentic Italian treats to be had. Enjoy house-made panna cotta with mixed berries and caramel or indulge in a classic Italian masterpiece; tiramisu with rich mascarpone.
