The casual elegance of the space is echoed in the simple yet modern menu overseen by Executive Chef, Etienne Karner. Etienne has been passionate about cooking since he was a child and he injects this lifelong love into the fare at The Dining Room. After beginning his career in France, Etienne went searching for new experiences, a journey that took him around the world to the United States, the Caribbean, Dubai and Ireland. Throughout his travels, Etienne was able to explore new cultures and cuisines and to learn different styles and techniques of cooking.
Etienne’s passion for classical cooking, fused with modern techniques, makes the best quality ingredients shine. All of the meat and seafood is sourced locally and sustainably where possible, while the fruit and vegetables are purchased fresh from the market each day. Locally made butter, cheese and olive oils are also sourced from local producers and artisans.
The Dining Room offers something for any time of day, with breakfast, lunch and dinner options all available. For an elegant dinner, start with the Sydney rock oysters with shallot and red wine mignonette and cracked black pepper; or the confit of Tasmanian salmon with avocado, crème fraîche, pomelo, yuzu foil and avruga caviar.
Moving onto mains, the choices do not become any easier. Choose between mouth-watering options such as slow-cooked lamb loin with stuffed zucchini, rosemary polenta, chorizo, smoked eggplant and piperade jus; or the olive- glazed John Dory with spring vegetables, saffron pomme bouchon, lettuce hearts and piquillo peppers. Alternatively, opt for a guest favourite: the barramundi ‘au citron’ with braised fennel, pickled red onion, treviso and citrus beurre blanc.
The dessert menu is just as impressive, with offerings including rum-roasted pineapple with smoked chocolate mousse, hazelnut crumble and vanilla ice cream; and pomegranate blancmange with poached pear, basil gelato and meringue shards.
With so many choices to make, you may need to order a glass of wine while you peruse the options. The incredibly extensive wine list has been created by Colombian sommelier, Walter Henao, and highlights fine drops from all over the world. His drinks list also includes a large selection of cocktails – both innovative and traditional mixes are designed to delight and refresh. A variety of beers and ciders are also on offer for those less wine-inclined.
