The East Village Sydney, one of Darlinghurst’s oldest pubs, has been given a new lease on life, thanks to the team at Goodtimes Hospitality.

The historic institution re-opened its doors in late 2016, following a complete refurbishment. Its many levels were given a much-needed makeover, with the instalment of three dramatically different concepts: the Public Bar (ground level), Athletic Club (level two) and the Terrace, which now features up-close views of the city skyline.

The East Village (formerly Darlo Village) was the second pub to receive the Goodtimes treatment, after Petersham’s West Village. Co-founders James Bodel and Locky Paech saw the chance to revamp as a no brainer, with the opportunity to do something different for Darlinghurst locals.

Enter at the ground floor and stumble into the Public Bar, also affectionately known as the Wine Pub. Combining the historic building’s smoky rendered walls, scuffed paintwork and 20th century Serge Mouille wall lights, the bar has been reincarnated as a contemporary urban haven. Taking centre stage in the bright space is the wine collection, resting behind the leather-clad bar.

General Manager Lee Potter Cavanagh, 2015 Australian Bartender of the Year, has compiled a spectacular wine list, including cellar wines by the glass and bottle. Presented on a hanging wine board, the selection changes throughout the day. With the help of bar manager, Reece Griffiths, Lee has also created a medley of wine-based cocktails to test your taste buds. Try the Backyard Americano, which sees a regal rogue bold red paired with organic 25 bitter, mulberry vinegar and fizz.

Head Chef, Graham Jones, and Executive Chef, Tom Kime, are in charge of the re-imagined counter menu. Recognisable dishes with a modern twist occupy the list, with offerings such as the half roast chicken with sweetcorn, shallots, roasted heirloom tomato, basil and crispy bread. Add a delicious salad, such as roast peach, prosciutto, almonds, ricotta, rocket and baby basil, and your meal is sure to delight.

No pub is complete without some sort of sports element. That’s where the aptly named Athletic Club comes in. Located on level two, it is a sports lover’s dream space. Private bottle lockers line the back of the bar, while multiple television screens line the walls above the darkened panels and classic worn leather booth seats. Grab a seat at the bespoke poker table or take a peek at the historic sporting memorabilia before ordering a drink from the gentlemen’s club list. Highlights include the Bridge Road Robust Porter and English style rum or the Cold Buttered – a whisky with Pepe Saya syrup, walnut bitters and sesame.

For sport diehards, the Athletic Club also offers the Red Room, a private space with a wall-length television, seating for 10 people and table service. Book it out for sporting blockbusters and experience the VIP treatment first hand.

Continue the climb to escape to the Terrace – a 100sqm rooftop bar with one of the best views of the Sydney CBD skyline. The urban oasis includes a rooftop garden bar, plush lounges, garden seating and high tables to enjoy the panoramic views of the city below.

With a more casual approach, the menu takes a different route to the Public Bar. Light snacks and summery dishes with a global influence are on offer, with options like oysters served with chili and ginger, or rare grilled veal with anchovy and herb mayonnaise, caper berries and fried anchovies.

The cocktail collection up on the Terrace is designed to start you off slow and take you through the night, so you can enjoy the view as it transitions. Start with a Seasonal Mimosa with prosecco and seasonal fruit and end on the daring Squidmark Sour – a Bulleit rye whiskey, Tempus Fugit gran classic bitters, crème de cacao, cherry, grapefruit, shichimi togarashi and squid ink.

The East Village Sydney is the perfect one-stop shop – start with a drink in the public bar, head upstairs to watch your game of choice, and continue celebrating with a view. After all, this historic pub knows how to have a good time.
