Barangaroo’s latest rooftop bar brings the tropics of Queensland to Sydney’s waterfront, delivering Australian flavours with a modern twist, tropical cocktails and sleek tunes.
Untied is the latest offering in the Barangaroo precinct. It aims to bring the focus back to the classic Aussie experience, presenting a casual venue that celebrates the very best of our great land.
In typical Aussie style, the menu is designed to share and features light bar food and contemporary BBQ dishes, all using local produce – after all, what would an Aussie venue be without the very best in local ingredients?
Top-quality seafood is on full display at the Raw Bar, where a daily selection of seasonal oysters are topped with garnishes like dashi and finger lime, and Jabuticaba and vanilla. Snapper is served simply, with finger lime, ginger, chilli and puffed wild rice, while the Tajima Wagyu bresola comes with reggianito, aged balsamic and pepper berry.
The snack selection continues the seafood theme, with scallop toasties, sardines on toast and popcorn prawns, served with sesame and smoked crustacean sauce. However, if you’re not a seafood fan, don’t despair: the beef tartare and veggie chips will offset any incoming hunger pangs.
If you’re after a larger meal, the wood grill has your back. There are no shrimps on this barbie, but you’ll be delighted to find options like octopus with smoked eggplant, cavolo nero and carded leeks, as well as lamb with honey, native mint, asparagus, sorrel and goat’s curd. All wood grill dishes come with flat bread to soak up all those delicious juices.
Cocktails are split between House Faves, True Blues, Too Easys and Old Mates. Falling under House Faves, the Flamin’ Galah combines Jinzu gin with homemade ginger soda syrup, fresh watermelon and lime juice, while the The Bushranger – listed under True Blue – is a mix of Bulleit bourbon, Montenegro, T2 peach tea, fresh lemon juice and sugar syrup.
The wines by the glass list is long and lengthy, with showings from Australia, New Zealand, Argentina, France and Italy. Similarly, you’ll be spoilt for choice with the selection of beers, ciders and spirits on offer – if you get stuck, feel free to turn to the team of bartenders; they’ll be able to point you in the right direction.
Untied is built for Sydney summers, with pops of colour keeping things light and bright. The external green stairwell sets the visual tone for the rest of the venue with lush greenery and colourful furniture completing the look. Concertina glass doors allow the seamless blend of indoor and outdoor areas, providing corporate workers, tourists and local residents with lots of space to kick back and relax.
