Billy’s Cheeseburger & Hand Cut Chips

Serves 5
Patties

Dice brown onion and sweat until clear. Add paprika to onions and allow to cool. Mix all ingredients, including Tabasco and Worcestershire sauce together. Roll into 200g patties.

Hand Cut Chips

Cut potatoes to desired size. Steam potatoes for approximately 25 minutes or until so. Deep fry potatoes until golden and crispy.

Pickles

Slice cucumber to desired width. Toast cumin seeds in a pot. Add vinegar, sugar, water, mustard seeds and bring to boil. Pour over cucumber while warm and allow to sit

To Serve

Cook patties until medium (or well done if preferred) and place cheese on top to allow to melt.

Cook bacon on a grill or frying pan. Toast the burger buns. Place tomato sauce, mustard and pickles on the bo om of the buns, followed by the rest of the ingredients. Enjoy immediately with chips on the side.
