Coconut and Vanilla Bircher

Method

Coconut milk kerbs my cravings for something creamy without feeling like I’m over-indulging. I’ve added maple syrup here, but for those wanting to cut down on sugar, the coconut and vanilla provide enough natural sweetness on their own.


Makes 2 bowls

Place all the ingredients for the bircher in a mixing bowl
and stir to combine.Cover and place in the fridge

Cover and place in the fridge overnight.

To Serve

The next morning, divide the mixture into 2 bowls and serve with the suggested toppings.
