Makes 3 sliders
Heat up vegetable oil to 180°C in a deep pot or deep fryer. Clean the crabs in water and dry with paper towels.
Meanwhile, combine the flour, chilli, salt, pepper and Chinese five-spice in a medium bowl. Add the crab and toss gently so the spice mix coats evenly. Deep fry each crab separately until the shell turns red and the coating becomes golden. Remove and set on some paper towel.
Combine the lemon zest and the mayonnaise. Spread onto the cut brioche buns. Build the slider by adding the crab, then the cabbage, bean sprouts, capsicum and herbs. To finish, add more mayonnaise on the top side of the brioche and serve.
