Cucumber, Mirin & Sesame Salad

Mirin & Ginger

Dressing Mix all ingredients together and leave to sit for minimum of 1 hour before using.

Sesame Salad

Halve the cucumbers lengthways and use a teaspoon to scrape out the seeds, then cut on an angle into lengths about 10cm x 1cm. Lightly toast the sesame seeds in a dry, heavy-based frying pan. Add to the bowl with the cucumber, along with the remaining ingredients.

To Serve

Pour over the dressing, toss everything together well and serve.


CHEF’S TIP: Mike notes that as this dressing keeps well and is good with any green salad, steamed vegetables or even an oyster, it’s well worth making a double batch. Store the extra dressing in a screw-top jar in the fridge for up to 2 weeks.
