Jalapeño Salmon Tataki

Flamed sashimi salmon with jalapeño dressing
Method
Serves 4-6
Sauce

Add all the ingredients into a blender. Blend until very fine. Pour into a bowl and leave to settle.

Tataki

Prepare non-stick pan or griddle. Add sesame oil and heat until smoking hot. Flash sear salmon on all sides – do not cook more than 1mm into the flesh. Leave to cool in fridge.

To Serve

Slice salmon into 1⁄2 cm slices and arrange on your presentation plate in a layered display. Mix cream into sauce and drizzle around the salmon. Garnish with microherbs.


Chef’s tip: Ask your fish monger to cut the salmon into a rectangle for you, to save doing it yourself.
