Pickled Cucumber

Place the sliced cucumber in a bowl. Mix the other ingredients together and pour over the cucumber. Stand for 2 hours to allow the cucumbers to pickle.

To Serve

Place 9 slices of kingfish on each plate and garnish evenly with the fennel, raw and pickled cucumber, shiso and golden trout roe. Dress the kingfish with a little of the pickling liquid from earlier and season with salt.
