Raw Snapper with Shaved Fennel, Radish, Ruby Grapefruit & Shiso

Method
SERVES 4

In the centre of a plate, lay snapper down and season with sea salt to taste. Place the shaved fennel, grapefruit segments and radish on the snapper.

Grapefruit Dressing

Combine all ingredients and shake well.

To Serve

Dress with the grapefruit dressing and garnish with shiso leaves and fennel tops.

Finish with extra virgin olive oil and cracked black pepper, to taste.
