Egg and Lettuce Sandwich

You’ll need a nine-minute yolk (so its center is only slightly soft), the ripest beefsteak or heirloom tomato, iceberg lettuce, mayo, and the most delicate white bread (griddled to get extra credit). Don’t forget to sprinkle plenty of salt and black Pepper on the egg and the tomato.

Ingredients

White sandwich bread, two slices

1/4 cup Hellmann’s Best Foods or Hellmann’s mayonnaise divided

Two thick beefsteak tomatoes slices

Kosher Salt, freshly ground Pepper

Hard-boiled eggs: 2 eggs, peeled and sliced in half.

Iceberg lettuce, three leaves

Preparation

Spread the thinnest possible layer of mayonnaise on both sides of the bread slices up to the edge. Cook bread in a large, dry skillet on medium-low heat for about 3 minutes on each side. Let cool on a plate. Spread the remaining mayonnaise on both bread slices. Sprinkle generously with Pepper and salt. Top one slice of bread with tomatoes. Arrange eggs over tomatoes; season. Add lettuce and close the sandwich.
